El aceite de oliva virgen extra (AOVE) nacional está c compuesto por una fracción lipídica mayoritaria y por una fracción minoritaria, principalmente integrada por
pigmentos y compuestos fenólicos. Estos son llamados compuestos bioactivos y se relacionan con efectos beneficiosos para la salud cardiovascular, siendo los responsables de otorgar a este aceite el rol de alimento funcional. |
